Vegetable Lentil Soup

This is my first ever lentil soup so I decided to go full vegan with an Indian flare, and it turned out wonderfully! Serve with naan if you need a treat.

INGREDIENTS

1 tbsp coconut oil

1 Yellow onion, diced

1 clove garlic, minced

1 cup diced carrot

1 stick celery, diced

4cups vegetable broth 

1 28 oz can diced tomatoes

2 cups dry lentils

2 tsp cumin

2 tsp turmeric powder

1 tsp ginger powder

1/2 tsp salt 

1/2 tsp black pepper

1/8 tsp crushed red pepper 

Sauté the onion and garlic in coconut oil for 5 minutes. Add carrots and celery and sauté 5 more minutes. Add vegetable broth, tomatoes, lentils and spices. Stir and bring to a boil over medium high heat. Turn heat to medium low and simmer, covered, until lentils are cooked through, about 45 minutes. Add a small amount of water if needed during cooking.
