Today I’m super hungry for something warm and hearty but also absolutely not in the mood to go to the store. What’s a girl to do? Simple potato soup in a crock pot sounds like an idea!
4 large russet potatoes, chopped into 1/4 inch pieces
2 cups milk
3 cups chicken or vegetable broth
1/2 cup carrots, diced
1 Yellow onion, diced
1 tsp salt
1 tsp black pepper
3 tsp white flour
1 tbsp freshly chopped chives (optional)
Add all ingredients to a crock pot and cook on high for 4 hours. If you prefer a thick creamy soup rather than chunky, smash the soup up some with a potato masher half way through cooking. Serve hot.
