This is a quick and easy dish that I make from time to time when I’m tired of whatever I’ve been eating all week. I live alone so when I cook my food lasts days and days and sometimes you just need something different, right? This takes almost no prep time, less than an hour in the toaster oven and the only dish to wash is the one you cooked in.
The only critical point is that you need a small casserole dish with a tight fitting lid or your pasta won’t cook through. The measurements in this recipe are all eyeballed because it totally depends on the size of your dish.
1/2 cup pasta
1/4 cup pasta sauce
2 tbsp milk
Preheat the toaster oven to 350. All of the measurements above are a guess. I just throw everything in and since the size of our dishes may not be the same, you might be able to use more or you might be stuck with less. Just fill the dish about half way full with pasta, add a big gob of sauce and stir it around, pour in enough milk to fill 1/3 of your casserole dish from the bottom and add your favorite melting cheese (I find that goat cheese is amazing for this but today I used up some leftover mozzarella). Just make sure that you don’t fill the dish too full or you won’t be able to get a good tight fit on the lid and your pasta won’t soften. Cook for about 30 minutes.
