Gorgonzola is an aged Italian blue cheese made from whole milk. Blue cheeses are cultured with the mold Penicillium. Blue cheese has a sharp flavor which blends nicely with the mayonnaise and Worcestershire sauce in this Gorgonzola dip. Worcestershire sauce hails originally from Worcester, England. It is a fermented mixture of vinegars, molasses, sugar, salt, anchovies, tamarind extract, onions, garlic, and spices.
4 oz crumbled Gorgonzola or blue cheese
1 cup light mayonnaise
2 cloves garlic, minced
1 tsp Worcestershire sauce
Combine all ingredients in a bowl and serve cold with pretzels or chips or use as a sandwich topping.
