Eggplant Pizza

This is a simple vegetarian  recipe for those days that you’ve got to have pizza but need to keep the calories down. I like to make just a couple of slices at a time in the toaster oven. 


1 large eggplant

1 cup pizza sauce

Fresh Basil or dried Italian herbs 

1/2 cup green olives, whole or sliced

8 oz mozzarella or 8 oz grated parmesan

1/2 to salt

Preheat the oven to 400. Lightly oil a baking sheet. Remove eggplant ends and slice into 1/4 inch thick slices. Lightly salt the eggplant and bake for 20 minutes. Remove the eggplant from the oven and top with sauce, cheese, basil and olives. Turn on the broiler and broil on the top shelf for about 3 minutes or until cheese and sauce are warm and slightly browned.  Watch carefully while broiling to avoid burning. Serve hot.
