Curry Potatoes

curry potatoesI already wrote one recipe for curry potatoes, but it’s one of my favorite foods so I had to do a second curry potatoes recipe.  This is delicious served as hash browns with fried eggs.

Ingredients

1 tbsp coconut oil

2 medium potatoes, diced

1/2 tsp salt

2 tsp turmeric

1 tsp paprika

1/2 tsp cumin

1/2 tsp ground coriander

Heat coconut oil in a skillet over medium heat.  Add diced potatoes and spices.  Cook for about 15 minutes, stirring occasionally, or until potatoes are cooked through.
